Braised Pork Belly
Preparation
- Cut caribeton pork into large cubes.
- Boil for 10 minutes, then drain and rinse.
- Place pork and ginger in a pot with water and simmer for about 1 hour.
- Add soy sauce, sake, mirin, and sugar.
- Continue simmering on low heat for 1–2 hours until tender.
- Add boiled eggs during the final 30 minutes if desired.
- Serve with broth and a small amount of mustard.
