Braised Pork Belly

Preparation

  1. Cut caribeton pork into large cubes.
  2. Boil for 10 minutes, then drain and rinse.
  3. Place pork and ginger in a pot with water and simmer for about 1 hour.
  4. Add soy sauce, sake, mirin, and sugar.
  5. Continue simmering on low heat for 1–2 hours until tender.
  6. Add boiled eggs during the final 30 minutes if desired.
  7. Serve with broth and a small amount of mustard.
